Run, Bike, Eat

Sounds like a great day, right? I thought so! Woody was golfing today with a friend from college who lives in the area and with only a few weeks left of the Cherry Creek Farmers Market before the end of the season, I wanted to get there. Plus it was a beautiful day, perfect to be outside!

I started the day with a run! It poured all day yesterday – which makes people a little nervous around here right now – but it was beautiful this morning! It was cold, but beautiful. I got to wear my Oiselle Lesley Knickers (they have magic sewn in them!) and my vintage Oiselle jacket because it was all of 39 degrees when we walked out the door. Brrr! Woody and I haven’t been running together often. He is faster than I am and likes to take a different route. Somehow though we tend to run into each other (no pun intended) at some point as we did today. I was nearing the end of my run, heading down Wynkoop towards 16th Street and I noticed Woody at the intersection! I yelled his name, thankfully he heard me, waited for me to catch up and we finished our runs together. I’m sure he had gone a bit farther than I had but I was really happy with my run this morning and felt good! I’m loving fall and wish it would last just a bit longer.

After my run it was time to get going again. While Denver has a pretty good public transit system – especially for a mid-sized metropolitan area – with local and regional buses and a light rail system, it’s lacking in some respects. For instance, the 4.5 mile trip from our apartment to Cherry Creek would take about an hour via public transportation. Thankfully Woody and I went for a bike ride a few weeks ago so now I have an option for going places when he has the car.

I got there and back without any incidents although I was a bit nervous at times and my senses were on high alert. Thankfully I can take the busy and beautiful Cherry Creek Trail rather than the busy and hectic streets almost the whole way. Tonight I am definitely feeling a new sense of freedom and with growing confidence and experience on the bike I’ll have a new way to burn some calories!

A Little Deliciousness: Quinoa Stuffed Peppers

A while ago after seeing this breakfast stuffed pepper recipe on Lean Girls Club I got the urge to try my hand at making stuffed peppers, but it wasn’t until just recently that I actually did it. I haven’t spent a lot of time cooking the last month or so with the move, starting a new job and getting into a new routine, but Sunday night I made it my mission to make these peppers. Going on little more than an idea of what could go well together and inspiration from LGC, I started pulling ingredients out of the fridge.

The below are approximations (I don’t seem to measure often when I cook) of the ingredients I used for the filling of two stuffed peppers. I kept it pretty simple for my first try.

  • 1 cup cooked quinoa
  • 1/3 cup black beans
  • 1/2 cup mix of chopped onion & chopped zucchini
  • 1 tbs. balsamic vinaigrette
  • Fresh ground pepper
  • Chipotle & Turmeric to taste

I pre-heated the oven at 350’ (and discovered 15 minutes later that our oven is off by 50 degrees – good to know), mixed the stuffing ingredients listed above, cut the tops off the two peppers which I purchased at the Farmers Market, chopping up the tops and adding to the mix, then stuffed. I placed in a baking dish sprayed with olive oil spray.

After baking for about 45 minutes I added a little cheese and put back in for another 10 minutes. Here’s the end result…deliciousness in a pepper!

It turned out how I had hoped but next time I’ll add corn and some spinach to bump up the nutrition even a little more!

Getting Acquainted

After living in New York City for 9 years I knew the place pretty well. I’m learning my little neighborhood here in Denver and some other parts of the city, but it feels incredibly big and with a car we have access to so much more than what I felt we had in NYC, making it all somewhat intimidating. The opportunities seem endless and I’m not really sure where to start. Which means, we just have to get out there and see what we see and we’ll make our way around eventually. I’m not used to not knowing where I am and what’s out there, so a little exploration was in order this weekend.

Running with Bears and Conquering the Dunes, Part I

We are back in NYC from vacation. Just got in this evening and we’re currently trying to ignore the fact that we have to go back to work tomorrow morning. We had such a great week in Michigan and I was not ready for it to end.

Let’s see…where did I leave off?

Tuesday was a big day for us. By far the most activity we did in one day. We woke up bright and early at 6am, had a light breakfast and packed up the car. I was a ball of nerves and anxiousness. I get like this before every race I enter, and this time the fact that we had to drive more than an hour to the race made it a little worse. What if there was a detour we didn’t know about that takes us far out of our way? Or we got stuck behind a tractor that we couldn’t get around? These are very real problems in this part of Michigan. Thankfully, neither of these things happened and we made it to Glen Arbor in plenty of time.

The race was the Running Bear Run 5K (run/walk). All proceeds for this race, which is organized by the local women’s club, go towards scholarships for local high school students and other town projects like the community garden. It was really easy to find a parking spot and registration to pick-up our numbers. Pretty much the entire town came out for this event, along with others like us from around the area. A mix of families who walked the out and back course together and serious runners. We fell somewhere in the middle.

Unfortunately there was no bag check, apparently in the 6 years they’ve had this race, I was the first to ask about one. Maybe everyone just leaves their things at home! Thankfully the car was only a block away and I had plenty of time to take the camera and other oddities back to the car. I missed a picture with the running bear though. He had a great headband and is apparently joining the Army soon so they’ll have a new bear for next year’s race.

We stretched on the lawn of one of the local churches as everyone gathered and chatted with family and friends. Two local musicians were introduced to sing the national anthem and everyone lined up at the start line – a banner over the street, a blue chalk line drawn across the road and a guy in an Uncle Sam hat on a ladder. Woody and I made our way close to the start line so we wouldn’t get caught behind the walkers and after a brief description of the course – Run to the next corner, not this one right here, but the next one, then stay to the right of the cone and turn left, you’ll see where to go, then take the road all the way to the turnaround and come back – and we were off.

The music along the way was an interesting mix. Of course, this was the local women’s group hosting the event, so music at the first turn was religious music, then as I passed by the next group of volunteers playing music the U of M fight song was starting, thankfully to balance this, the MSU fight song was finishing up as I made the turn around and then more religious music at the last turn back to the finish. Not really the kind of music that gets you pumped up to run, but this is small town America! The course was actually a little boring. Given all the beautiful scenery in the area, both Woody and I were surprised that the course just took us past some homes along a street lined by tall trees. We were hoping for views of the lake, but we understand it was easiest to shut down this street rather than the main ones, plus, an out and back course is less volunteer intensive and easier to measure, so we get it. Aside from a small hill at the start and a few tiny rolling hills, the course was basically flat. I tried to stay towards the center of the road, where it was less slanted, but had to jostle around some people as I passed them. While I did pass some people, I was also passed by at least four runners pushing strollers! I contend though, that parents who often run with strollers are super human and are stronger than many ‘normal’ runners. We saw the lead man pass by as he headed to the finish, I think his time was around 17 minutes. The first woman to cross the finish line was a teenager and I think she was in the top 10 finishers overall.

When I got to the turn for the home stretch I picked up my pace a little, which was pretty solid the whole way, but I misjudged exactly where the finish line was and didn’t pick up my speed soon enough. I came in at 27:03 by my watch (this was not chip timed) but could have easily come in under 27 if I had picked up my pace earlier. Oh well, I’m really happy with my race over all. While I still struggled with my breathing because of my sinus issues, I do think that running in fresh air, as opposed to the smoggy air of NYC helped a bit. My ENT said I’ll never breathe like I did before I had my surgery, but I started taking Nasonex which helped and the fresh air was a good mix and I did feel better running than I have for a long time. Definitely a great feeling.

After I crossed the finish line I went through the mister (an older gentleman with a garden hose) then met up with Woody, who finished almost 5 minutes before me. We stretched and found our way to the amazingly bountiful tables covered with fresh fruit, bagels, and homemade muffins, cookies and brownies. Seriously amazing spread. We stuck around for the raffle drawing but weren’t any of the lucky 84 people who won prizes donated by local merchants. Still, it was fun to experience the small town fun. Afterwards we stopped by the weekly Farmers Market. It was great to see so many local farmers and people picking up fresh fruits and veggies, baked goods, jewelry and soaps.

First Saturday of Fall

Last week was really crazy at work. Most everyone was feeling exhausted only half way through and I was not alone when I was still at my desk at 7pm last night. I’m SO glad it’s the weekend! How about you?

I didn’t get my weekly Five for Friday post up but I have a few minutes before I head out to watch some Spartan Football. This is what Fall Saturday’s are about, right? College football!

Oh yeah, and running and farmers markets!

After my run this morning I had my first bowl of oatmeal for the season – simple with just flax, chia, and 1tsp each of PB and maple syrup – and coffee.

Then I headed out to the Union Square Greenmarket for some Fall deliciousness. I came home with a butternut squash, pears, apples, kale, green pepper, purple potatoes, green beans, and an eggplant! Great stuff, right?

Woody left a bit ago for the bar where tons of MSU alumni get together to watch the football games. As an alumni club board member it’s his ‘job’ to represent the club there and recruit new members, sell shirts to raise money for our scholarship fund and coordinate with the bar. He loves it, but he has to get there two hours before game time. I’m leaving in a little bit and will get there about an hour before (thank goodness for the reserved Board table!) Check him out – all decked out in State gear! Doesn’t he look like he could be an assistant coach?

A Morning at the Market

I started the morning with another great 5 mile run. Starting next weekend I'm bumping up one of my weekend runs to 6 miles. I know for some that 6 miles isn't much at all, and I have done a few of them during my 'come back,' but I'm on still working on increasing my mileage in a thoughtful and smart way. I'm feeling great right now and I don't want to risk another injury!

After I finished my run I stopped at the Andaz Market like every week for apples and pears. The Andaz Wall Street, a hotel, started a Saturday farmer's market last summer and it's only a few blocks from our apartment! It's a small affair, but has the fruit and veggies we like. Unfortunately I found out that today was the last market of the season.

After showering and eating, I headed to the Union Square Farmer's Market to pick up more produce for the coming week - the office Thanksgiving potluck and our Thanksgiving dinner with friends on Thursday. Plus, the usual stuff. I was a bit shocked by how empty the subway station was but it was definitely busy in the market! Plus, the annual holiday market opened yesterday, making it even more crowded than usual!


The market was full of great looking produce, baked goods, plants, meats, cheeses, and a cooking demo!




I left with lots of goodies and was happy to support local farmers. Even if one place has a lot of what we need, I'll only get a few things and then get the others from other stands, to spread the love! We're really lucky here in NYC to have so many great markets!

Weekend in Review

The weekend was almost a blur. A busy, athletic, fun and tasty blur.

It started Saturday morning when changed up my normal routine and instead of going for a run on my own I headed to a local Sports Authority store. April had invited me to join her at an Asics/Sports Authority sponsored event Saturday morning for a 5 mile group run. I immediately agreed but then Saturday morning I started having doubts. April is fast (really fast) and I am not. I was worried that I would be the slowest and finish by myself. Probably around 15-20 people showed up and there was a nice spread of bagels, fruit, coffee and water waiting for us. It was an out and back route - 5.5 miles in all - along the Hudson River. April was sweet and hung back with me on the out portion and then went ahead on the back. There were about 6 others who had a similar pace so I stuck with them. The way back north was tough since the wind was vicious yesterday. My hat actually blew off my head, thankfully I wasn't right by the river at that point and it didn't go far so I was able to get it. We were pushing hard into the wind and it turned into a bonus strength training session! The whole time I was pushing myself harder than I would have on my own, so I am definitely glad I went. It was a good test for my legs and lungs.

When we returned back to the store the food (which was hardly touched before hand) was still waiting for us along with goodie bags that included an Asics baseball hat, watterbottle, gloves, and winter cap, along with a coupon for Sports Authority. Two women won free Asics shoes in a raffle, too! I wish I had taken a picture, but afterwards my mind was focused on getting home so I could get ready and head to the bar to watch the MSU/Illinois game.

The Spartans won, 26-6, and are now 7-0. It's the first time MSU has been 7-0 since 1966. We may be smelling roses come January 1st!!
After the game we headed straight to the Grub Street/Hester Street Fair Food Fest I mentioned in my post on Friday. Well, as expected we got there a little too late. The place was absolutely packed and quite a few vendors had already ran out of food and packed up their booths. Woody had his heart set on a smoked meat sandwich from Mile End and after waiting in the long line for 15 minutes and getting to be five from the front, they ran out. We ended up getting an Indian wrap of some sort from Gloria's I & II filled with a potato mixture, spinach and pumpkin. It was perfect! I'm so glad I ended up with that because it was warm and delicious. A bit messy but I miraculously didn't get any of it on me!


We saw a woman eating a fantastic looking dessert and found out it was from an Aussie restaurant, The Sunburnt Cow: small sponge cakes with strawberry jam between the two layers wrapped with a thin chocolate layer and covered with coconut. Yep, heaven on a paper plate.


We made our way through the crowds and headed home. I didn't need more than a piece of fruit the rest of the day. My stomach was very happy. I just hope next year they use a bigger space and the vendors bring more food!

Sunday morning I met up with Grace and Kether for yoga at Lululemon. I haven't been there for a few weeks because of the GOGI 10K and my trip to Minneapolis; it was nice to stretch out for an hour. After yoga we stopped by the apartment to show them our new place and pick up Woody to go to the Fulton Stall Market and the New Amsterdam Market.


We picked up some great things like brussel spouts, apples, pears, an acorn squash, rolls for dinner and our favorite nordic bread. Right when we got home I used the nordic bread to make a light meal since I'd only had a cracker with peanut butter and raisins before yoga and a banana after. I paired the egg sandwich with one of the apples we had also gotten at the market and a coffe from around the corner. Yum.


Dinner Sunday night was pretty low cal and healthy. Low Sodium butternut squash soup from Trader Joe's, salad and the rolls from the market. It was a perfect cool weather Sunday evening meal! The soup wasn't very thick because it doesn't have any cream, but it was really good. I love butternut squash soup and the fact that it was low sodium, low cal and still tasty was fantastic. Woody approved too!


And we finished the weekend watching the BCS Countdown special on ESPN (MSU is ranked 7th - ahead of Ohio State! - in the current BCS standings) and enjoying my first attempt at making brownies using just a mix and a can of pumpkin!

A Trip to the (New Amsterdam) Market

Sunday after yoga, Woody and I headed over to the New Amsterdam Market! I heard about it last year when they first started holding this market at the old Fulton Fish Market (near South Street Seaport) but we never checked it out because back then, it was quite a trip on a Sunday afternoon from our place on the Upper East Side. Now though, it's only a few blocks away!

They've held the market a few times over the summer but today was the first day of the season - it's open every Sunday from 11am till 4pm through the fall except for November 28th. As stated on the website, the market "promotes regional economic development. We support small businesses dedicated to creating local food systems and to reviving the thriving, equitable culture of the urban public marketplace."

We also stopped by the Fulton Stall Market, right across the street, on our way there. The Stall Market has vendors selling goodies like tea, coffee, fruits, veggies, and baked goods. Here are a few sights from the New Amsterdam Market. I can assure you we will be visiting quite often!








We tasted breads, chocolate, bacon peanut brittle, jams, and Woody also tried a few meats and cheeses. While I enjoyed these tastes, I still hadn't had a proper breakfast so I enjoyed one of the small Finnish rye rounds we had purchased with almond butter and raspberry lime jam (thanks mom, it's really good!) and a banana. It was delicious!!


Sunday night was Pizza night in our apartment! I've found a veggie pizza at Trader Joe's that is a good 'base' pizza but definitely lacks a bit when it comes to the veggies, so I like to spice it up a bit.

Semi-Homemade Veggie Pizza
ingredients:
1 frozen whole wheat vegetarian pizza
2/3 cup chopped veggies
1 small sweet potato, diced

1. Bake diced sweet potato for about 14 minutes at 400'
2. Heat chopped veggies in a microwave bowl for 1 minute to soften
3. Top frozen pizza with veggies and sweet potato (you may have some extra sweet potato, that's okay!)
4. Bake pizza as directed
5. Enjoy!



Even when you don't feel like putting in a ton of time to make a fresh, homecooked meal from scratch, you can always take just a few minutes of chopping to add fresh veggies to a frozen meal, adding a lot of nutrition in a snap!

Take A Peek Inside My Bags

It's Wednesday. If you've been reading my blog for a bit (and welcome, to the new readers!), then you know I've been to the farmers market this morning.

So far, my day has gone like this:
4:50am - wake up

2hrs at the gym (details below)

Union Sq Farmers Market
kale, zucchini, NJ sweet corn, apples, cherries, peach, whole wheat roll from Hot Bread Baker, sugar snap peas, green & wax beans, and a sweet potato
we're told to eat our fruits
and veggies!

Then Whole Foods and Trader Joe's
Whole Foods: Fage (out of Chobani and this was on sale), fresh fruit for a snack
Trader Joe's: organic carrots, frozen broccoli, whole wheat muffins, tofu (I found a recipe I'm going to try this weekend!), organic black beans, cottage cheese, bananas (can't pass them up - 19 cents each!)

Then I chatted with my mom while I rode the bus back Uptown, turned on the USA vs Algeria game while I unloaded, showered, and prepared today's yogurt mess:
(Chobani 0% plain, banana, strawberries, blueberries, TJ's shredded wheat, a few peanuts)

I can't wait to try the sweet corn! I've been waiting for fresh corn to show up at the market! I was a bit skeptical that this is actually local since it's still early, but I know the Greenmarket staff does there homework and checks up on all the vendors and their products. If they have products that are off-season, the farm is checked to make sure they actually produced it. If farms violate the rules, they can loose their spot at all NYC Greenmarkets, so obviously they're not going to. (Apples being the exception - they're allowed to be put in cold storage and sold throughout the year)

I also want to mention how proud I am of my amazing husband who is now on our local chapter of the Michigan State University Alumni Club! He's going to do an amazing job, especially beefing up the sports teams and events offered by the club.
