After spending nearly all of March traveling then having my sister and little nephew visit for a weekend, I’ve been happy to have the chance to do a little cooking. Unfortunately my week nights have been pretty busy, but that leaves the weekend to get in the kitchen and do more than just “put together dinner.”
With the days warming up a bit, I had a hankering for fish tacos so yesterday we picked up the ingredients at Trader Joe’s and Whole Foods. On the list:
- 2 Tilapia filets
- Cabbage slaw
- A lime
- Whole wheat tortillas
- Guacamole hummus (a TJ product)
From the pantry:
- Olive oil
- Balsamic vinegar
- Chipotle
The fish was really easy – just cooked in a pan on the stovetop with a bit of olive oil and fresh lime juice.
I mixed two teaspoons of olive oil with one teaspoon of balsamic vinegar and a pinch of chipotle then poured over 1.75 cups of cabbage slaw and mixed together.
After heating up the tortillas a little, we topped them with a bit of fish (broken up into pieces), some slaw, and some guacamole hummus. Easy, delicious, and healthy – what more can you ask for? Oh right, sweet potatoes. I made sweet potato chips to have on the side!
This morning we worked off our dinner with a great run through lower Manhattan and across the Brooklyn Bridge and back before heading to the gym for some strength work and stretching. Great way to start a Sunday!

I love fish tacos and I love it a bit spicy - add some jalepenos or hot salsa. And need your sweet potato chip recipe, please!
